A creamy, protein-rich satvic sauce made with silken tofu, avocado and cashews works beautifully as a sandwich spread, salad dressing or dip. Two recipes in one bowl!

Avocado Silken Tofu Sauce

Ingredients
  

  • 1 piece Silken tofu
  • ½ Avocado
  • 4 pieces Cashews
  • 2 tsp Milk
  • ½ tsp Sugar
  • ½ tsp Chilli flakes
  • ½ tsp Salt
  • 2 tbsp Cheese, grated

Method
 

  1. Blend the sauce: Add the silken tofu, avocado, cashews, milk, sugar, chilli flakes and salt into a blender or mixie. Blend until completely smooth and creamy.
  2. Adjust consistency: If you prefer an even creamier texture, add the cheese and blend again for a few seconds. Taste and adjust salt or chilli flakes as needed.
  3. Use as a sandwich spread: Spread generously on bread and layer with your choice of vegetables for a protein-rich sandwich filling.
  4. Use as a salad dressing: Toss the sauce with fresh chopped vegetables in a bowl for a quick creamy salad. Serve immediately.

Notes

Two uses in one: This sauce works as both a sandwich spread and a salad dressing — make a batch and use it both ways.
Keep it fresh: Avocado oxidises quickly, so this sauce is best made fresh and used the same day. If storing, press cling wrap directly onto the surface to slow browning.
Cheese note: Adding cheese makes it richer and thicker — great for sandwiches. Skip it for a lighter salad dressing consistency.
