- Blend the sauce: Add the silken tofu, avocado, cashews, milk, sugar, chilli flakes and salt into a blender or mixie. Blend until completely smooth and creamy.
- Adjust consistency: If you prefer an even creamier texture, add the cheese and blend again for a few seconds. Taste and adjust salt or chilli flakes as needed.
- Use as a sandwich spread: Spread generously on bread and layer with your choice of vegetables for a protein-rich sandwich filling.
- Use as a salad dressing: Toss the sauce with fresh chopped vegetables in a bowl for a quick creamy salad. Serve immediately.

Keep it fresh: Avocado oxidises quickly, so this sauce is best made fresh and used the same day. If storing, press cling wrap directly onto the surface to slow browning.
Cheese note: Adding cheese makes it richer and thicker — great for sandwiches. Skip it for a lighter salad dressing consistency.
