Energy-Boosting Banana Walnut Overnight Oats

Ingredients
  

  • cups milk
  • 1 banana, chopped
  • dates (optional)
  • 1 cup oats
  • ½ cup chia seeds
  • walnuts (to taste)
  • honey (to taste)
  • greek yogurt (to taste)
  • cinnamon sugar for topping (optional)

Method
 

  1. Blend the banana milk: Add the milk, banana and dates (if using) into a blender. Blend until smooth and creamy.
  2. Layer the jar: In a jar or container, add the oats, chia seeds, walnuts, honey and greek yoghurt.
  3. Combine: Pour the blended banana milk mixture into the jar. Stir everything together well until you achieve a thick, combined consistency.
  4. Refrigerate overnight: Cover the jar and refrigerate overnight.
  5. Top and serve: In the morning, give it a stir. Top with a spoonful of greek yoghurt and a sprinkle of cinnamon sugar if desired. Serve cold straight from the jar.

Notes

Dates tip: Adding dates to the blender gives a natural caramel sweetness and extra energy — great if you prefer less honey.
Consistency tip: If the mixture is too thick in the morning, stir in a splash of milk to loosen it up. If too runny, it needed more chia seeds.
Make ahead: Prepare up to 2 jars at a time and keep refrigerated — they stay fresh for up to 2 days.
Chia seeds: These expand overnight and are what gives the oats their thick, pudding-like texture. Don’t skip them!
