Method
- Blend the creamy base: Add the soaked cashews, silken tofu, milk, vanilla extract, protein powder and pitted date into a blender. Blend until completely smooth and creamy.
- Add oats and chia: Pour the blended mixture into a bowl or jar. Add the rolled oats and chia seeds and stir well to combine.
- Add chocolate: Fold in the dark chocolate chips or nibs if using.
- Set overnight: Cover and refrigerate overnight or for at least 6 hours until thick and set.
- Dust and serve: In the morning, dust generously with unsweetened cocoa powder or a little extra protein powder. Serve straight from the jar — cold and creamy!

Soaking the cashews: Soak cashews in water for at least 2 hours or overnight — they blend much smoother and give a richer, creamier base.
Protein powder: Hazelnut or tiramisu flavoured protein powder gives the most authentic tiramisu taste. Vanilla flavour works well too if that's what you have.
Cocoa dusting: Dust the cocoa powder on just before serving, not before refrigerating — it stays looking fresh and elegant this way.
Split serving tip: Make the full batch and split into two jars for two mornings of high-protein breakfast under 350 calories each!
